When Broccoli is in question you want to know a few things that will help you in cooking broccoli.

Choose broccoli with green leaves, strong stem and tight bouquets. Do check for any smell in broccoli and the darker the color the better as would be more nutritionally beneficial.

Keep broccoli wrapped in a plastic bag, or in the vegetable section of the refrigerator, for 4 to 5 days.It also freezes very well, after its been cleaned for 5 minutes in boiling water and drained thoroughly.

Prepare broccoli by passing it under water, then cutting the stem and cooking for no more than 5 minutes in case of steaming, 7-10 minutes in boiling water while boiling broccoli, 3-8 minutes if preparing in the microwave as it would retain its green colour, soak them as soon as cooked in cool water to remove excess heat.

To cook in microwave you take a safe micro wave dish ,place the broccoli pour little water just to damp the surface of your broccoli. Then you place a plastic wrap on top of your dish while making sure to leave a small opening not too lose so that a little steam can escape. Microwave on high intensity for about 3 minutes or so. Stab a fork to see if it is cooked accordingly.

· For the dough:

· 200g flour wind

· grated cheese

· 2 tbsp yeast malt (optional)

Preparing the Potato and Broccoli Quiche


  • Cut the potatoes into slices and put them steaming fresh.
  • Add the onion and broccoli florets, cook for 20 min.
  • Prepare dough by mixing flour, butter and salt.add water as you go.
  • Roll out the dough and arrange in a buttered pie plate.
  • Sprinkle a tablespoon of malt yeast on dough.
  • Arrange the vegetables and mash lightly with a fork.
  • In a bowl, combine eggs and yogurt, salt and pepper.
  • Pour this mixture over the quiche.
  • Sprinkle with cheese.
  • Bake in hot oven for 35 min (as low as possible in the oven).

· 1 tablespoon olive oil

· 2 cups of broccoli sprouts

· Medium mushrooms 1 cup cut into four

· 2 tablespoons light soy sauce

Procedure

· Cover the entire surface of the pan with oil.

· Make sure your pan is hot and enough oil is present to prevent the broccoli and mushrooms from sticking.

· First add mushrooms cook them for about 3 minutes while a change in color is visible but do not over cook it.

· Add the broccoli and thoroughly mix it with mushrooms stir for 2 minutes.

· Add soy sauce, stir and serve immediately.

· 1 kg of broccoli florets, fresh or frozen

· 2 large carrots

· 2 onions

· 1 clove garlic

· 1 / 2 bunch parsley (or a very large handful)

· 1 cube vegetable stock

· 2 tablespoons olive oil

· Sea salt

· Ground black pepper

  • Peel the onions, garlic and carrots and cut into large dices.Put the olive oil in a large saucepan and cook the vegetables over medium heat with salt and pepper.Stir occasionally until the vegetables soften and begin to turn brown.

· 400 grams of flour,

- 1 / 2 tea spoon of salt

- 15 grams of yeast

- 1 table spoon of olive oil

- 1 clove of garlic

- 400 grams of broccoli

- 200 grams of sausage

- 200 grams of mozzarella cheese

- extra virgin olive oil

- salt

- pepper

  • Prepare pizza dough by placing the flour in the centre with lukewarm water and yeast
  • Begin to knead by absorbing water and then add the oil and salt.
  • Transfer the mixture on a pastry board and knead the dough for about 20 minutes until the dough is elastic and smooth.
  • Form the dough into a ball, cover it and let it stand for 3 hours.
  • In the meantime, clean the broccoli by removing the outer leaves and cutting the stalks; Wash under running water and divide the broccoli.
  • Place broccoli in a pot with water and cook for about 5 minutes from the time of boiling, then drain and set aside.
  • In a pan add oil fry in a clove of garlic, then add the broccoli tops and let them cook for a few minutes.
  • Lift the garlic, blend the broccoli and sausage and season with salt and pepper, then turn off the heat and set aside.
  • Once risen, pick up the dough for pizza on a floured work surface roll out with a rolling pin to a thickness of about 3mm.
  • Grease baking sheet with oil and place the pizza dough. Distribute broccoli and sausage.
  • Pour a little olive oil, raw broccoli and sausage on the pizza and bake in preheated oven.
  • Bake pizza at 250 degrees for 20 minutes.
  • Add the diced mozzarella and then turn the oven off and leave the pizza in the oven a few minutes until that the mozzarella has melted.
  • Cut the broccoli and sausage pizza into slices and serve!
